Do you know if you sent a friend request to someone, but they haven't yet accepted, can they see your profile?

Yes, I am almost positive that they can. You sending them a request gives them an option to view your profile.

Not necessarily, it depends on your privacy settings. I just looked at 4 pending requests and I could only see the profiles of 2 of them.

They can only see what anyone who searches for you can see. A friend request doesn't mean anyone can see anymore than that. (I know this because of the numerous friend requests I've rejected from current students... happily -- for everyone -- I can see nothing more than their profile pic.  )
