putting a vegetable in boiling water then into ice cold water is called 'blanching and shocking' it's done on almost every show on the food network or cooking channel and it really works! it's great to do with asparagus and string beans especially, because it keeps the color a vibrant green. it's also how most veggies are prepared in restaurants too...faster, and prettier presentation.
