melting chocolate help

i've made chocolate lollipops before many times.
this time, i was making chocolate covered oreos. i was going to use red and yellow chocolate. for some reason, the chocolate has the wrong consistency. it melts, but it does not turn liquidy enough. anyone know why this is? anything i can do to make it more liquid?

TIA!

Re: melting chocolate help

You can add paramount crystals or a little bit of crisco to thin it out a little

Definitely try adding crisco.

But maybe you are heating it too much.

Re: melting chocolate help

thanks ladies!
i lowered the temp, and it helped some but not much. Maybe my memory is deceiving me and this was how thick the chocolate has always been! Chat Icon

Re: melting chocolate help

my chocolatier friend of mine had told me that a mistake so many people make is the heating. She recommends heating in 30sec intervals in the micro to start softening and then it will get to a smooth texture.

I did this the last few times and worked really well.

also, i find that i like Merckens brand chips melt really well, compared to wilton or craft store brand.

if the chocolate is old, it may also give you that thick gloppy texture.

i've also noticed i have this trouble more with the colored wafers than regular ones. which is why i like the Merckens color brand. I find they work really well.

I noticed that the Wilton colored chocolates melt like that. I don't use the microwave, as I have a chocolate melter, so it's not really a heating/timing issue. It seems to harden just fine though.
