Good Stuffing Recipe Without Sausage?

Does anyone have a good stuffing recipe that does not have any meat? I keep coming across ones that have sausage, but my family does not eat pork. It's okay if it has chicken broth (will most likely sub with vegetable broth). TIA!

You can substitute the sausage with chopped meat.

I guess I should clarify a bit more. MIL wants no meat in the stuffing. Even if I did put meat in it, it would have to be halal (and halal sausage does not taste good!). So I'm on the hunt for a good stuffing recipe that doesn't involve any meat, maybe just vegetables and herbs.

My PIA family makes two kinds--with sausage & without.

I don't really have a recipe, but we always use Pepperidge Farm stuffing mix--
follow the directions on the bag. We use chicken broth, but vegetable broth would work. Make it a little on the wet side--you may need more broth than suggested.

Seperately, saute chopped celery & onions. Depending on who is hosting, sometimes carrots are added.
Mix vegetables in with stuffing. Spread it out into a casserole dish or disposable aluminum pan, and bake in the oven untill the top is crisp. I think this part is usually done while the turkey is resting.

ETA- it is pretty much this recipe.

I make a mushroom stuffing that everyone loves. Here it is Mushroom Stuffing

I've never tried making it with vegetable broth, but there are halal chick bouillon cubes in most halal butcher shops that you could pick up.

You can also use apple juice or cranberry juice to moisten the stuffing. I have done this and it is actually quite good. Saute mushrooms, onions and celery in a bit of olive oil and butter. Season with salt, pepper, garlic powder. I use fresh thyme in my stuffing. When veggies are warm enough to handle add to your bread cubes, stale bread, whatever you are using, add eggs, and juice, using your hands to incorporate.

Thanks for the suggestions ladies! I used to have some of the halal chicken bouillons and will definitely have to pick up more.

I make a cornbread stuffing that is always a big hit:


Ingredients:

• 2 cups chopped onions
• 2 cups chopped celery
• ½ cup butter
• 4 cups finely crumbled toasted bread
• 4 cups finely crumbled cornbread
• 1 tablespoon salt
• 2 teaspoons pepper
• 1 tablespoon dried sage
• 2 teaspoons poultry seasoning
• turkey or chicken broth (from simmering giblets with 3 ½ cups water for 45 minutes. Unused portion can be used for gravy)
• 4 large eggs, beaten

Directions:

Preheat oven to 400 degrees. Melt butter in skillet; add onions and celery and sauté until tender.
Combine toasted bread and cornbread in a large bowl and mix. Add onions and celery plus their cooking liquid, the salt, pepper, sage, and poultry seasoning and mix thoroughly.
Using a baster, add just enough giblet broth to make a very moist mixture, then stir in the eggs and scrape the dressing into a large greased baking pan or dish. Bake until nicely browned, about 30-40 minutes.
