In my family it is tradition to make these kosher for passover sponge cakes... We make a chocolate chip version, a lemon version, and a nut/wine version... but this year my mom is making them.
SO... I usually make a homemade chocolate platter: chocolate bon-bons filled with raspberry jam, chocolate covered orange peel and chocolate covered matzah.
I always try and make macaroons but I have to admit, they never come out as good as I hope for...
This year I might try to make that sugar-jellied fruit like candy... don't know what it is called. But it seems difficult, so I am torn.

My mom always makes honey cake (mix) and buys macaroons, jelly rings, and fruit slices. My grandmother serves halvah.

A few years ago someone on here posted a VERY good recipe for kosher for passover brownies, I have made them for passover ever since, they really are good, objectively, not just kosher for passover good. here is the recipe: 1/2 cup butter 2 squares (1 oz) unsweetened choc, chopped 2 eggs 1 tsp vanilla 1 cup sugar 3 tblspns matzah meal or matzah flour ( I have only used the flour) 1/2 cup potato starch 1/2 tspn salt 1/2 cup chopped walnuts (optional) 1/2 cup semi sweet choc chips
melt butter over medium heat, remove from heat and stir in choc, set aside beat eggs and sugar with electric mixer for 5 min reduce speed to low and pour in the chocolare mixture, stir in vanilla in a separate bowl, stir together the matzah meal/flour, potato starch and salt. Stir this slowly into the chocolate mixture until well blended. Mix in walnuts and choc chips. bake at 350 for 25 min
I also make "matzah crunch", line baking sheet with matzah, broken into pieces, melt 2 sticks butter and 1 cup brown sugar, let boil for 3 min and pour over matzah. Bake at 350 for 15 min. Sprinkle choc chips over matzah and let it cool.

I've done Macaroons. Usu ally I hate macaroons, but homemade ones are sooo good. So easy to make too
Even easier is Choc dipper matzo. You can't go wrong with that.
When we go to family homes we usually buy the Kosher candy. Target has some cute "Passover" plates to plate it on

yes, make the matzah crunch and sprinkle some salt on top!
i have a recipe that is kind of like a shortbread and i might make lemon bars using that as a base. you can probably use a mandelbrot base instead. i don't have a recipe for the lemon part yet.

I make a flourless chocolate cake....not one even knows it's for Passover! Go on allrecipes.com.....there were some good ones on there!

I make a triple layer chocolate cake. I posted the recipe on here last year. It is outstanding. I need to start making it on Tuesday for it to be ready for Friday night. It is amazing.

Passover Mondelbread
Ingredients * 1 cup white sugar * 1 cup brown sugar * 1 cup pareve margarine * 6 eggs * 2 3/4 cups matzo cake meal * 3/4 cup potato starch * 1/2 teaspoon salt * 1 cup chopped walnuts * 2 cups semisweet chocolate chips * 2 teaspoons white sugar * 1 teaspoon ground cinnamon
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease a large cookie sheet. 2. In a large bowl, cream together the 2 cups sugar and margarine until smooth. Beat in eggs one at a time, mixing well after each one. Combine the cake meal, potato starch and salt; stir into the creamed mixture. Mix in walnuts and chocolate chips. The mixture will be heavy. Form into 2 long oval loaves. Place onto the prepared baking sheet. Sprinkle the top with a mixture of 2 teaspoons sugar and cinnamon. 3. Bake for 50 to 55 minutes in the preheated oven, until a toothpick inserted into the center, comes out clean.
*I only make it once a year but I remember 50-55 minutes being too long to bake them. I believe what I did was took them out after 30 minutes, sliced it and then sprinkled it with more of the cinnamon sugar mixture and baked another 10-15 minutes.

I made these and they were delicious!
Passover Strawberry Bars
Prep: 20 minutes Cook: 45 minutes Yield: 16 to 20 servings Ingredients 11/2 cups butter or margarine 2 cups granulated sugar 4 eggs 2 cups matzoh cake meal 1 tablespoon fresh lemon juice 12 ounces strawberry jam 11/2 cups shredded coconut 1 cup chopped almonds Preparation 1. Preheat oven to 350F.
2. Cream butter and sugar in a container of an electric mixer until creamy. Add eggs, mixing well. Add cake meal and lemon juice, mixing well.
3. Place 1/2 of cake meal mixture evenly in a lightly greased 13- x 9-inch baking dish. Spread jam evenly over the top; sprinkle coconut evenly over jam. Add remaining cake meal batter over coconut; sprinkle with almonds.
4. Bake in preheated oven for 45 to 50 minutes or until lightly browned. Let cool completely before serving.
