Defrosting cake question
Hi all - our 1 year anniversary is Oct 9 (yay! ) and of course we will want to defrost and eat the top of the cake that has been taking up space in our freezer. However, we are going to be out of town the weekend before, and will be getting back late on the 8th. How should I defrost it? Should I take it out before we leave on the 5th and just let it defrost slowly in the fridge? Should I take it out as soon as we get home on the 8th and hope it defrosts in time for us to eat it on the 9th?

I would definitely put it in the fridge on the 5th. It should be fine by the time you are ready to eat it. If it is dense, one day may not be enough to defrost it. Happy Anniversary!

Defrosting cake question
thanks! that's what i thought. my thinking is, after sitting in the freezer for a year, any quality that could be lost by it sitting in the fridge a potential extra day or so has already been lost.
