Need cheese suggestions for cheese platter

I want to do a cheese and cracker tray for Christmas day, but I'd like to get a few really nice cheeses. I'm really a novice when it comes to cheese - I usually do muenster and cheddar...Any recommendations of some very good cheeses?

Port Wine Cheddar is my DH's fave, but it's a soft cheese.

I think gruyere is always nice on a cheese platter, if you like hard cheeses. I also like one called prima donna, which is kind of like a cross between parmesan and a gruyere. And a similar cheese, ishtara, is harder to find, but one of our favorites.

Havarti with dill is also popular when I do a cheese plate and want something different.

Also, if you are interested in introducing a smokier flavor, I would look at smoked gouda or smoked mozzarella. For tamer palates, mozzarella rolled with proscuitto or salami looks pretty if sliced up on a platter.

Maybe something soft and spreadable, like a goat cheese? A log of goat cheese always looks nice rolled in herbs. Or sometimes I like to buy a small round of goat cheese and drizzle it in honey.

Or if goat cheese is too much of an acquired taste, maybe boursin or allouette (soft cheese with herbs)?

Lambchopper - It's soo freakin good and I've turned so many people onto it this year. Haven't met anyone who hasn't liked it!

Manchego

Both can be found at Fairway or Whole Foods. Fairway's cheese department is phenomenal and very helpful!

My Cheese platters usually have:
sharp cheddar
blue cheese (with a little cup of honey, cause it completely changes the flavor of blue cheese when its drizzled on top)
Triple Cream Brie
Fresh(or smoked) Mozzarella
Herbed Goat Cheese
(and I'll add apple slices and grapes along with the crackers)

I'd go similar to this.

A cheddar
A blue
A triple creme
A goat cheese

Serve with jam, dried fruit, nuts, crackers, toast points.

For our cheese this year I got:
Cambazola - a soft brie like blue
Apple Smoked Cheddar
Blackstick Blue - a yellow veiny blue cheese
Zbojnik Cheese - New to me, but very smokey and firm
French Brie
Boursin - garlic and herbs

And to go with it I got some pickled onions, small french cornichons, chicken liver pate, and some assorted sauces and chutneys.

This is our Christmas Eve dinner and I can't wait!

My favorites are, A good quality extra sharp cheddar, a goat with some sort of perserves, manchego or a parmesan, and a smoked gouda. I love a stinky blue and havarti but they aren't always a hit in our house. I think all of the other ones I listed are really people friendly.

I like to do a mild cheese, a soft cheese, and a strong cheese. If I want to splurge I do a hard cheese as well.

For tomorrow I chose a colby jack, a brie, and a gorgonzola. I also love havarti, parmigiano reggiano, smoked gouda, pepperjack, and port wine.
