What do I make with them? I was hoping to use them for my Spanish tapas themed housewarming party but I am drawing a blank. Any suggestions would be greatly appreciated. I would prefer to keep them as whole pieces because I already have a roasted peppers and artichokes tapenade on the menu.

I just bought them too. I'm planning on using them to make a hummus pizza (pizza topped with hummus, sliced tomatoes, artichokes and spinach). Maybe you could do some type of flatbread pizza and cut it into bite sized pieces?

I used them to make a yummy baked artichoke dish. Tastes like stuffed artichokes but less work.
Ingredients

1 1/2 cups fresh breadcrumbs
1/4 cup finely chopped fresh curly leaf parsley
2 ounces Parmesan cheese, grated (1/4 cup)
2 ounces Pecorino Romano, grated (1/4 cup)
1 tablespoon mixed dried herbs, such as thyme, oregano, and savory, or Italian seasoning blend
1 teaspoon coarse salt
Freshly ground pepper
3 packages (9 ounces each) frozen artichoke hearts, thawed and drained
2/3 cup extra-virgin olive oil, plus more for baking dishes
1/4 cup fresh lemon juice (from 2 lemons)
1 teaspoon finely grated lemon zest
2 garlic cloves, minced (2 teaspoons)
Directions

Preheat oven to 325 degrees. Combine breadcrumbs, parsley, cheeses, herbs, and salt in a medium bowl, and season with pepper.
Brush oil inside two 4-cup, 9 1/2-inch ceramic baking dishes or one 9-by-13-inch glass baking dish. Divide artichoke hearts between dishes, and spread into a single layer. Sprinkle breadcrumb mixture over artichokes, pushing it into cracks between hearts. Tap bottom of dishes on counter to settle breadcrumb mixture.
Whisk oil, lemon juice and zest, and garlic in a small bowl. Drizzle dressing evenly over breadcrumb topping. Cover dishes with parchment, then foil, and bake for 30 minutes. Increase temperature to 375 degrees. Uncover, and bake until breadcrumbs are golden brown, 20 to 25 minutes. Serve immediately.

Sausage, artichoke and sun dried tomato pasta

Pioneer Woman Spinach and Artichoke Pasta

These are two of my favorite recipes. I know it's not very tapas oriented, sorry!

Than you, everyone!

cj7305, I think I will attempt your recipe! Sounds really good and goes with my theme!

That pasta looks really! Not for this party, perhaps, but I will definitely be making it in the future! Chat Icon

If you want to keep it simple, maybe you can just defrost them and then marinate them and serve them with a cheese and meat plate.... like an antipasto.

I chop them up and mix with egg, minced garlic, bread crumbs, parm cheese. Then I form them into patties and fry them.. they are so delicious and my DS gobbles them up. You could also bake them if you want a healthier version.

ETA: OR you could saute them with shallots and eat with pasta. YUM!
