Please help me make better lunch choices...
I really need to lose 10 lbs. My biggest problem is my choice of lunch and my weakness...pizza. I can eat a slice of pizza everyday and I really need to stop. Starting tomorrow I am going to try to eat healthier for lunch. I have a Walbaums by my job so I can pick stuff up there. Please share what you eat for lunch. Thanks!

Shrimp salad: chopped up shrimp, avocado, red onion, blackened corn, cilantro, tomatoes mixed with lemon juice, salt and pepper.
Chicken salad: chopped up chicken mixed with balsamic vinegar, mustard, spices, olive oil, celery, cranberries and nuts. Eat with slices of cucumber.
Grilled chicken or fish with a side of sautéed spinach and mushrooms.

Re: Please help me with my lunch choices...
This week, I've been making chicken breast, baked with seasoning and lemon. Vegetables and a 1/2 cup of garlic flavored quinoa/rice mixture just to get some texture and flavor in there.
It's kind of like chicken pot pie in a bowl.

I'm obsessed with Wasa Light & Crisp crackers. I often eat them with some honey maple turkey and a little bit of cheese.
Bagel thin spread with laughing cow cheese and a crumbled piece of turkey bacon
Salad with lots of veggies, goat cheese and a few dried cranberries
tuna with cucumber slices
chickpea/bean salad

Re: Please help me make better lunch choices...
I recently stopped eating Lean Cuisine lunches and it's made a huge difference. I don't bloat after meals from the sodium. I promise, making healthier choices for lunches will make an impact!!
Here are a few things i like to eat now:
1. Low-sodium turkey (2 slices) on Arnold's 100 calories sandwich thins w/ lettuce and a slice of tomato. I add 1 tiny dallop of LIGHT mayo. And by dallop I mean less than 1 tsp.
2. Tuna salad with celery on a sandwich thin with lettuce and tomato.
3. Spinach tortilla with sundried tomato laughing cow cheese (I spread the cheese on the wrap), low sodium turkey or chicken, baby spinach, and tomato rolled into a wrap.
4. Portabello mushrooms, no-salt added mozzerella cheese, roasted red pepper, baby spinach, drizzled lightly with balsamic on a whole wheat wrap.

Re: Please help me make better lunch choices...
Every Sunday i make a chicken in my crock pot so that I have lunch for the week. It's so much better for you tham cold cuts or store bought chicken bc it doesn't have the sodium (I used to eat cold cuts every day). I make sandwiches or a salad with chicken. I also made skinnytaste cilantro chicken salad which was good. There are so many options and having the chicken done in advance makes the prep easier and steers you toward a healthy choice.

not sure if you'll see this but how do you make the chicken? is it boneless? seasoned? how many pounds? sorry for the questions but it sounds like a great idea and i'd like to try it! thanks!

I take a whole chicken squeeze a lemon over top and put the rinds inside, chop up onion and garlic and put around and inside. Then I season with whatever I feel like at the moment (salt, pepper, oregano, parsley, etc). I cook it on low for about four hours depending on size. That's it. So simple.

I recently saw this on pintrest, but they added sliced bananas on top of the peanut butter and then a dash of cinnamon. It looked amazing

Sounds really simple! How many days does this chicken last you & doesn't the chicken dry out over a couple of days?

That shrimp salad recipe sounds really yummy, do you use a whole avocado? If so how much shrimp do you use? Thanks!
