What to make with kielbasa? Need low-carb ideas
I had planned to make pierogies but I really need to focus on lower carb meals, I haven't been getting nearly enough protein. Any ideas on what goes well with pork kielbasa and sauerkraut?

I'm no help.
All the goodies that I make with kielbasa and sauerkraut are carb loaded : mashed or boiled potatoes, spaetlze, warm potato salad, sandwich rolls . Even the beer has carbs.
I can't think of anything else that would go.

I was thinking maybe just grilling it and serving with haluski on the side? It does have noodles in it, but whole wheat would be a good option, and since there's cabbage, you can use less noodles.

Not sure if it's low carb- because of the beans- but it's protein packed and from the weight watchers website.
DH was doing WW and used to love this

Thanks everyone! Of course I forgot I posted this and already went to the store   but I am definitely going to try the mashed cauliflower! NervousNell, thanks for the recipe, I wish I liked beans, because that looks yummy!

Trust me I would make ALL of those if I wasn't trying to drop these last few lbs

no recipe... id just braise the red cabbage in apple cider vinegar and honey, and mix the cooked quinoa in. id probably cook the quinoa just shy of done so it can soak up the sweet and sour braising liquid. if i had any green apple id shred some up in there too.

BJs  but I'm not a huge fan of the one I bought, going to check out Wegman's and see what they have.

You can also substitute kielbasa for pretty much any recipe that calls for sausage. Just an idea, its really just a garlicky sausage.
I've made up my own dish with kielbasa (or sausage), chicken, peppers, onions, carrots, celery, tomatoes and kind of a jumbalaya spicy sauce. You can serve this over rice, but you can just eat it like a stew. Yummy.
