just use it to taste. if you want the frosting to stay as white as possible make sure to get the clear extract. i don't use butter extract because i use butter in the frosting. i also don't use almond because my husband is allergic but no reason why that won't be delicious.
i put all sorts of things - vanilla, orange, peppermint. i've also used raspberry jam in frosting. i also often use booze in my frosting - grand marnier, rum, raspberry liquor (can't remember what it's called right now).

Re: What extract do you use to flavor buttercream?
I think it depends on the flavor profile of the cupcake -- different frostings go well with different flavors.
I think you can never go wrong with vanilla.
Almond extract is pretty strong, so I would go 2:1 on vanilla versus almond (like 1 tsp of vanilla/1/2 tsp of almond). I make Barefoot Contessa's coconut cupcakes a lot, and I believe that is the ratio I use on the buttercream frosting (and then it gets topped with coconut flakes).

Thank you. I ended up doing 1/2 tsp vanilla to 1/4 tsp almond...sooooo good!
