What to do with cold, cooked beets?
I dont know why I bought them but there they were in Costco, and I thought I'd try them. Now I dont know what to do with them. They come packaged four to a pack. They are fully cooked and require refrigeration, so they are cold, however, the recipe that is on the box says you can roast them too. Help?!?

I love beets cut up in a salad with goat cheese.

I like to make beet salad. Dressing with olive oil and vinegar and onion.
