How about a pasta or orzo salad, maybe add grilled shrimp or chicken. (no mayo, more of a Greek or Italian dressing, toss with grilled squash, baby spinach, olives, cherry tomatoes, feta or mozzarella)

Or a quiche

I was thinking of pesto w chicken/orzo. I might go with this paella salad:

Both sound so yummy!!!!!

That paella salad sounds so good! Do you have a recipe for your pesto one? And have you made them before?

I had a recipe for the pesto, now I just eyeball it. Basil, garlic, good parm cheese (not the green jar),salt and evoo. Ive made that before. I never made the paella salad before - ran it by people at work, they thought it was a good idea. I'll let you know what I decide/how it comes out.

For my pesto, I grate fresh garlic into the mini processor w basil. I like it sharp.
