Favorite summer meals

Could you share favorite summer meals/recipes? I'm having a lot of trouble cooking this summer and its not really fair to my family :)

chicken apple sausage with strawberries ( both grilled) u can do it on the bbq or in the broiler
lots of fish with steamed veggies

adding fruit to any dish makes it summery , to me at least

peach balsamic by The Tubby Olive is AMAZING!!! drizzle that on pineapple, throw it on the grill with a scoop of coconut sorbet and basil..DEELISHHHH light summer dessert

Red Pepper Butter Sauce

I peel and cut 3 red peppers and put them in the food processor with some fresh basil. I put it in a sauce pan with a stick of butter and some salt and pepper. Bring it to a boil and then let it simmer for 10 minutes. At this point I add a splash of milk, salt and pepper. At the end I add some tobasco sauce and red pepper flakes, depending on how spicy I want it. Then I pour it over linguine. It's delicious!
