Chicken
Please list your favorite, healthy easy to make chicken dish. Also, is it worth freezing cooked chicken? Will it taste just as good?

I like the Chicken Parmesan Casserole on the Emily Bites website.
I also like a lot of the chicken roll up recipes on Skinny Taste (she has a prosciutto and cheese one, a jalapeno popper one, etc.).
Cooking Light has a good pulled chicken sandwich recipe.
I like making a whole chicken (either baked in the oven or in the slow cooker). It's easy and healthy and you can use the leftovers for salads, sandwiches, etc.
Also, another thing I do with chicken is put boneless skinless breasts in the crock pot with water or chicken broth and whatever seasonings you like (e.g., garlic powder). Cook them on low for 6 hours or so and then shred them. If you have a Kitchen Aid Stand Mixer, I just throw them in the bowl of the mixer and use the paddle mixing attachment to shred them (so much quicker and easier than 2 forks). Then, you can use the chicken all week for things like salads, tacos or burritos or quesadillas, pasta sauce, pizza, sandwiches/wraps. Very easy and healthy to have on hand.
If I grill chicken, I like to use boneless, skinless thighs, as they stay more moist and flavorful (and they don't have much more fat/calories than breasts).
I personally never freeze cooked chicken on its own -- I've frozen it in soups, casseroles, etc. I usually freeze raw chicken and defrost as I need it. And I don't usually make huge batches... just what will last in the fridge for a few days.
