I'd like to know too! I don't use breads, pasta or much cheese in my cooking so I end up making the same things over and over.

i make everything from scratch for her: chicken noodle soup alphabet soup (way too messy though) broccoli-sweet potato patties roasted veggies blueberry muffins broccoli-cheddar soup

DD is 18 months and not the best eater at dinner time. Some fairly consistent winners are
fish sticks with fresh lemon juice pork chops with apple sauce italian sausage meatballs (the refrigerated ones from target are all beef and surprisingly yummy when I don't have time for home made) honey baked ham homemade chicken nuggets or chicken cutlets quesadillas with taco meat and cheddar beef stew chicken and dumplings
My sides are pretty repetitive but I do a lot of rice pilaf, pasta (barilla plus) with a little butter, sweet potatoes, sometimes italian bread or biscuits. Veggies for DD are usually frozen peas, green beans with almonds, steamed broccoli.

My girls are 3 & 5 1/2.... They'll eat (especially my older DD) pulled pork (I make it plain & top with a little BBQ sauce) Chicken grilled Chicken baked tenders/cutlets Roasted brussels sprouts, asparagus, butternut squash, artichoke, zucchini, yellow squash, sweet potato They love cherry tomatoes Loves a spaghetti casserole Loves couscous Will eat quinoa with a little Parm cheese Vegetable chili (not too spicy) Hummus with veggies & baked pita wedges Omelets
Sometimes I'll make them wheat pasta & a side of chickpeas if I'm making something I know they won't eat. (clam sauce, steak, etc)

I've had success serving : - Roasted fish with veggies and sweet potatoes - Homemade mac and cheese with gluten free pasta - Spaghetti squash casserole - Avocado and hummus on sprouted grain bread - Nut/ seed butters with jelly on sprouted grain bread - Burritos with beanns, brown rice and veggies - Veggie omelettes - Grilled cheese with veggies - Chicken cutlets with veggies - Shrimp different ways with veggies and brown rice. - Veggie , lentil soup.
ETA: Almost every kind of veggie works when it is roasted with lots of good seasoning. I think that kids love the crunchy texture.

DS was such an amazing eater...he would anything at one point.
Now at 3 years old - ughhh it's just torture!!!
Some go to dishes that I can get him to eat
- Minestrone with pastina (I add every kind of vegetable in here possible when I cook it - brocolli, cauliflower, carrots, peas, spinach whatever. It's the only way to get him to eat vegetables. I then blend it all up with the immersion blender to make a thick soup. He will eat 3 bowls of this, no compliants what so ever.
- spaghetti with parmigiano cheese and some butter
- Spaghetti with pesto
- Spaghetti sauted with fresh tomatoes and garlic (I only make pasta once a week for him, these are just the 3 ways that he will eat it
- Pizza
- Meatloaf
- taco's
- risotto
- saltines with cream cheese and pesto (I usually send these in as lunch for school once a week. He gets 4 'sandwiches')
Every once in awhile he may eat some chicken cutlet or a chicken nugget. But its very rarely that he does.

DS has gotten pickier but still loves chicken cutlets or chicken parm, chili, homemade tacos, homemade mac n cheese and I put applegate chicken sausage in it, and pretty much anything with cheese (homemade pizza, quesadillas etc) He also loves the applegate hot dogs and bacon lol.

My DD is 2 and loves: chicken cutlets, meatloaf, mac n cheese w/ veggies mixed in, ravioli, meatballs, tacos (i add black beans into the meat), hot dogs, sweet potato fries, peas, corn, carrots, pulled pork, burgers, pulled chicken.

Tacos Chicken pot pie Ranch chicken burgers Fish - white fish, shrimp, scallops (but only if you call it a fish nugget - he won't eat it if you call it scallops) Almost anything with ketchup, nothing with sauce

I usually make meatballs and sauce on Sunday. She will eat meatballs again early in the week with a little pasta. Pot roast in crock pot, over egg noodles with carrots. She loves "salad" (cherry tomatoes, celery, with a sprinkle of balsamic and EVOO. Grilled or broiled fish in lemon&garlic served with rice. Baked lemon chicken with potatoes And if we get take out, she will eat wanton soup (no meat), rice and steamed veg. Or pizza.

I feel your pain. My DD use to be a great eater when she was little, now she's a pain in the ass. She will generally eat only meatballs, chicken cutlets, pasta, cheese, yogurt, eggs, mac n cheese, hamburgers, and bread. She basically hates everything and won't touch a veggie and will eat apples ONLY if she can dip them in caramel or peanut butter. She has a crappy diet but it's so hard to get her to try anything.

THIS is my DS. Used to be an amazing eater... now, nothing - not even the "junk" he preferred in the past. I'm at a loss.
I thought even making his own garden this past summer would help - nope. He talks a good talk about what's healthy & will make you "big & strong"...but he won't eat it.

turkey tacos meatloaf w/ sweet potatoes & green beans spaghetti squash homemade pizza homemade soup- chicken noodle, butternut squash, broccoli cheddar, lentil veggie pasta w/ butter & parmesan cheese beef stew salmon, tilapia salad- lettuce, tomatoes, cucumbers with ranch dressing peanut butter & jelly ravioli pasta with homemade sauce & meatballs and if he won't touch anything...he gets his favorites- fruit & a yogurt, with some cheese.

For those who have kids who wont do veggies. I am in the same boat. I have two suggestions. we make smoothies together and I put organic frozen chopped spinach and call it "muscle power" I also use frozen and fresh fruit, yogurt or milk etc. I have also gotten him to eat these purees from Peter rabbit organic. Its pea, spinach and pear and I mix it with cinnamon applesauce. He will eat a huge bowl.
