I use Rachel Ray's Jambasta recipe and it's AMAZING! I haven't made it in years because it is spicy and DH can't tolerate spicy food anymore, but it's a really great recipe and it's delicious!

I do! I get rave reviews anytime people eat it...have made big batches for parties and people dig in.

Sautee up some green pepper, onion, and if you want a little chopped bacon to get the fat drippings.
Then add in your chicken breasts cubed up, Ham cubed, and sliced Keilbasa..cook till almost done. Pour in 2 cans of crushed tomatoes, 2 cups beef broth and 2 cups chicken broth. Add thyme and Cajun seasoning to taste (you can get the mix in the spice aisle) Bring to a boil and add 2 cups long grain white rice. Simmer and cover 10 mins then open and add shrimp (and bacon back if you used it) Cook for last 10 mins until rice is tender.

So Good! Add Cayenne if you like it with a kick

For easy nights... i LOVE the Zatarans! You can add all the stuff that people posted (try the small can of tomatos with the chilis in it) and kielbasa (i must grill it ... nothing else beats it).

I always get compliments, but i always serve it as a "side" dish...i guess i think of it as a rice dish with meat added to it. i like the idea of chicken in it too. Shrimp is best with the kielbasa...
