Ghee

Anyone have experience using it ? Bought some today. I heard that it is good for those allergic to lactose and casein.

I used it during my whole30 and paleo times.

It's AMAZING! I love it. I would use a small melon baller to take a scoop out and use that to make eggs or plop into a roasted sweet potato (with some salt). It's delicious! Adds a whole different dimension of flavor.

I make my own. I use organic unsalted butter. I put the butter in a saucepan over medium heat. The foam that forms on top is the whey and you can skim it off with a spoon. I don't do it and it disappears by itself. Ghee is ready when the melted butter turns golden. It takes about 10 minutes. The brown milk solids you see at the bottom of the pan is the casein and you don't want to eat it when you are trying to avoid casein. You may want to strain the ghee through a strainer. I just pour it into a glass container without straining.

Eta- just realized you weren't asking how to make it. I use it sparingly in cooking. If a recipe needs two tbsp of oil, I use half oil and half ghee. It gives the dish wonderful flavor.

I make my own using Kerrygold butter. I use it like a cooking oil for eggs, sautéing veggies, etc.

Thanks everyone ! I bought mine from purity farms ( organic / grass fed ). I put it on my cauliflower tonight, so yummy ! I will try sautéing with it soon and see how it comes out.
