I'd do another chicken besides the wings. You could do Chicken Francaise, Marsala or Parmesan. Personally, Chicken Marsala is my favorite.

I'd also add a salad and another vegetarian option, probably Eggplant Rollatini.

Is there a theme? Does the person have a favorite vacation place?

I had a fiesta theme for DH a couple of years ago and had a local place cater it. I did mini burritos, full tray of steak and a full tray of chicken to make tacos, empanadas, rice and beans, and crunchy steak and chicken quesadillas. It was a huge hit!

Is there any sort of theme? I feel like all the items you have listed are good but not necessarily together. It seems a bit chaotic (finger foods, foods to eat with a knife and fork plus you have fancy italian plus pub food but then asian style meatballs too). I think you should figure out a style of party you want, even if there is no theme, and work from there on the menu. What does the BDAY person like to eat?

If it's a surprise, I'd honestly try to keep it as simple and easy as possible.

I think I'm going to do it for DH's 40th in the summer and do strictly heroes, salads, wings, saussage & peppers and those huge baskets of chips & dips .........

and a dessert table.
