Kickass chicken I threw together tonight.
Someone posted a bruschetta chicken recipe I liked the sound of. I am notorious for throwing things together and it actually works out well. DH said I should share the recipe, since he loved it so much, lol.
About 2 lbs chicken cutlets, thinned out and cut into scaloppine (mine were like 4" squares)
Like 6 cloves of garlic, grated with a micro plane
1 cup fresh basil
1 pt grape tomatoes, halved or smashed
1/2 cup roasted red peppers, drained and chopped
1/2 cup white wine
Juice of half small lemon
2 cups baby spinach
Butter or substitute (I used I can't believe it's not butter light)
Olive oil, Pam
Spray a pan with cooking spray and add 1 tbsp olive oil if you like. Season the chicken with salt/pepper. Brown the chicken about 1 minute on each side and transfer to a dish and keep warm. Add garlic to pan and more olive oil if needed. Sautée one minute before adding the tomatoes, peppers, basil, season to taste. Sautée a few minutes longer until the tomatoes are soft and begin to break down. Jack the heat to high and add the wine, boiling off the alcohol. Add chicken back to the pan and stir to coat. Cover the pan partway. Add the spinach and lemon juice, simmer on low for 5 minutes more. Stir in the butter and simmer for 1 minute.
So easy and fast. I served it with whole grain barilla thin spaghetti with garlic and oil.... I had to share!

That sounds really good...since DH and I are vegetarians, I'm going to give this a shot with some soy sausages that I need to use up.
