Leftover taco meat & shredded pork?

Had a big cinco de mayo party this weekend and have lots of taco beef and carnitas (shredded pork) left over... any ideas for what to do with them?

I've made 'taco pockets' with left over taco meat. I bought a can of Pillsbury flaky biscuits, flattened the dough, added some taco meat and cheese and then folded it into a little pocket. I baked them according to the directions on the can. You could make them with the pork, too.

I've made this recipe - Taco Cupcakes - you can substitute your left over taco meat instead of making it fresh.

You can freeze it and then use it again when you want Mexican food. I freeze pulled pork all the time.

With the seasoning, I'm not sure how many other things you can do besides tacos, enchiladas, burritos, etc.

take the taco meat and mac a mac a cheese casserole with it.

you can also make enchiladas with that just add the sauce to it and re heat it on the stove together.

Pulled pork pizza

Pizza dough with BBQ sauce then pork. Cover with Mexican cheese and banana peppers sooooooo yummy !

I ended making taco flatbreads! They came out delish! Also, the crescent pockets.
