I lost a bet with my Mom, need ideas for a side
Needless to say, i have to cook dinner for my family, her and my dad, my brother and his GF AFTER WORK!! I need simple. I decided to go the sandwich route and I am making these....what would you make for a super easy side with these besides regular salad?

I'd do roasted potato wedges. Cut Pottstown into wedges, driZle with EVOO, toss with salt, pepper, onion powder, garlic powder, Italian seasoning and roast in the oven at 450.

i would do something like a mixed vegetable or even a roasted vegetable. Roasted broccoli is so easy- chop it up, toss with some EVOO and bake 25 min. Other good sides are creamed spinach, roasted potatoes, and even like the microwavable veggies (i know not the best) but still taste good.
also my personal fav is roasted asparagus tossed in some EVOO, pepper, lemon zest and a little parm cheese sprinkled on top. Roasted for 25 min. delicious.
i do everything on tin foil on the tray for a quick clean up! :)

Cold pasta salad - I make a tortellini salad all the time that's really quick, easy and delicious! I get a lot of compliments on it and usually have to bring it to most family gatherings even though it's such a simple dish.
For that many people I would get:
2 bags of cheese tortellini 1 bag of shredded cheddar cheese 1 jar of green olives 2 red peppers 2 yellow peppers 2 jars of Wishbone Italian Dressing
Just cook the tortellini and rinse it with cold water. Cut up the peppers and add those along with everything and 1 bottle of dressing into a big bowl and refridgerate.
When you're ready to serve, just mix in the other bottle of dressing.
I add it broccoli sometimes but if you're looking to save time, I would leave it out.
