tired of chicken ....but Im making it again
I took cutlets out usually I just grill maybe add some balsamic at the end but its getting blah..
I am not in to frying what else can I do for flavor and ?????
also what is the internal temp chicken should be?

Try the tomato basil chicken recipe from menu musings.com or the chicken cordon clue from skinny taste

I will take a took at everyones suggestions. I took the chicken out yesterday so I'll make it tonight.
I am not a meat, lamb, veal eater so maybe that's why I'm tired of it.

i bake chicken cutlets, easier and taste just as good! chicken parm stuffed chicken (with cheese, spinach, proscuitto, anything!) chicken marsala love chicken in a white wine, lemon, butter sauce - super easy. chicken topped with bruschetta stir fry chicken teryaki chicken

cut the chicken into tenders,dip into egg, bread in a mix of panko, crunched frenchs fried onions, and whatever spices you want. bake at 425.
sometimes instead of dipping into egg i will dip into bbq sauce

Jalapeno popper stuffed chicken then bake- (Cream cheese, jalapenos, shredded cheese)
Or roll and items you like into the breast (spinach & feta, mozz, ham, roasted peppers etc.) Then roll in breading and bake
Chicken stir fry or Chicken Fried Rice
Buffalo Chicken Over lettuce with Blue cheese
Chicken grilled with a mix of half saucy susan apricot and BBQ sauce (comes out orange and so good!)
Chicken sautéed in marsala wine and mushrooms (you don't have to fry the chicken then)
Chicken marinated in yogurt and dill then served either over a greek salad, pilaf rice or in a pita with toppings.

I made this for dinner tonight and it was so simple and amazing. Yesterday I took a whole chicken and cut it in half (you can also do this with precut pieces).
In my magic bullet (food processor, blender), put fresh parsley, one onion, salt and a few garlic cloves, salt and blend until it was fine. I poured it on the chicken and marinaded in a baking dish until late this afternoon. I just took the chicken and threw it in the oven and baked for about an hour (juices run clear).
It was soooooo juicy and the kids and hubby devoured it. Hubby also ate the chicken breast with no complaints (usually, it's his least favorite part bc he complains about dryness).
This was a Martha Stewart recipe that I saw this weekend.

I didn't have some of the ingredients for the bbq/apples or tomatoes one so I attempted to put mayo/parm and panko and bakes it..came out dry, now I have to eat for lunch.
I give up...

One of my favorite chicken dishes that we make is garlic naan bread topped with grilled chicken, fresh mozz, roasted red peppers and balsamic drizzle. DH does the grilled chicken, but I know he uses salt, pepper, onion powder, garlic powder, and I think a lil chili powder.

I made pesto chicken couple of nights ago, and served it over rice pilaf, and string beans. There were left overs, and I shredded it, and had it with tortilla, and some cheese for lunch the next day. It was easy and yummy.

I made a good roast chicken a few weeks ago. I stuffed the chicken with shallots and garlic. I melted some butter and brushed it all over the chicken. I took a pat of butter and put it under the skin by the breast. I then sprinkled some truffle salt on it.
I put the chicken on a roasting pan on a rack and threw some veggies (carrots, celery, onion, whole garlic cloves; don't get fancy chopping them- just a rough chop) and put in equal parts of white wine and chicken stock. Baked the chicken and then when it was done I added a cornstarch slurry and cooked the gravy until thick and then drained.
It looks a bit complicated, but it's so easy. The truffle salt really brings it up a notch.
