what is your go to dish to impress?

Looking to make a dinner for my inlaws this week. I'd like to make something good and impressive. What are your go to dishes that impress?

I make Ina garten provencal french beans - everyone loves it and its not too hard to make. It's definitely an impressive dish!

Roasted chicken is easy to make and is a nice dish. I also like Ina garten lemon chicken breasts. Sauteed string beans with garlic, evoo and cherry tomatoes. Black truffle mashed potatoes (add in black truffle oil or salt)

I like to make some type of roasted meat: I make a great roast turkey breast with delicious gravy; I also like to make beef tenderloin (filet mignon)... roast it whole (Ina Garten has a good recipe) and then slice it after it rests (you can make homemade bournaise sauce or Ina has a blue cheese cream sauce, or horseradish sour cream sauce to serve on the side). I also make a very good herb-crusted pork loin roast.

For sides, I often make twice-baked potatoes (they look nice and are delicious, but can be made ahead and just baked before serving). I also make a good carrot soufflé (recipe has been posted on this board by me before).

That and a nice green salad and/or roasted veggies makes for a nice "company meal."

I also make an easy oven baked shrimp dish (it's like a scampi type dish) over pasta.

You can also make chicken cutlets rolled with filling, dipped in bread crumbs, and baked... SkinnyTaste actually has a lot of good recipes (can stuff with ham and cheese, spinach and feta, broccoli and cheddar, etc.). They are good for entertaining because again, they can be made in advance and then just baked about a half hour before you want to serve dinner.

Chicken Madeira - I serve it with mashed potatoes and salad.
