still want to cook something comforting, if I cook turkey breast how do I keep it moist? that pop up timer never works for me

will be alone for thanksgiving this year

DH and I always do Thanksgiving by ourselves. We do a turkey breast too, with stuffing. I cover it with foil after seasoning it and roast. Use a thermometer so you know when its done, and not overcook it. I still make a few sides, homemade gravy and 2 stuffed artichokes for us to enjoy.

how do you make a gravy without the drippings from a whole bird? the drippings give it the flavor

The Breast will give off a little liquid. I remove the carrots, onion, celery that I roasted with it, deglaze the pan with wine, add broth and you're good.

Williams Sonoma sells an awesome gravy base you can use to bulk up your gravy and has great flavor. I don't follow the directions on the jar but just add it to my homemade gravy to stretch it, but I'm sure you could just follow the directions. It's delicious. Freeze the leftovers in cubes to use throughout the year since it's just you and use it with turkey cutlets or rotisserie chicken throughout the year.
