You mean catered? Or make it yourself?
I have no advice for catering, I find it always costs too much.
How many people do you need to be serving?
For things you can make on your own that go a long way here is my advice:
spinach dip. (very popular and its basically just a knorrs packet with a container of sour cream and a $1 box of spinach from the freezer aisle. cheap, easy to make, good to make in advance and it tastes good!)
buffalo chicken dip. (this is a bit pricier but it goes a long way, especially if you double the recipe and use a full rotisserie chicken. or stick with the regular recipe and use the other half of the chicken for something else!!)
sausage and peppers. (cut them up a lot, and mix it with the peppers and onions. that way you get a big pot of it and don't give away a whole sausage that someone may only eat half of). Also serve it with slices or portions of italian bread. Usually cheaper than buying individual rolls.
Or pulled chicken. (depending on how many people you have, you could use the leftover rotisserie chicken from the buffalo chicken dip if you made that).
With the sausage and peppers and/or pulled chicken you can do: macaroni and cheese and/or coleslaw. Both cheap and delicious. I would probably do both mac and cheese and the coleslaw if you wanted more of a meal. But if you wanted it to be more like an appetizer party, I wouldn't do both.
Get chips that are on sale.
Buy fruits and vegetables that are on sale and you can have a fruit and vegetable platter that doesn't break the bank.
Do you have a membership to costco, sams club or bjs? I find buying stuff for a party there is usually cost effective. especially if you pick a menu that has cross-over ingredients. Like more than one recipe needs shredded cheese, or you need a bunch of 1 item.

For a main course, I would consider pulled pork since that goes a long way. I usually serve with coleslaw and rolls . Maybe a chili bar with both beef and chicken chilis and serve with chips, cornbread, cheese, sour cream etc. Mac and cheese would also be good with all that.
