Minestrone Soup

Mine takes forever and I don't have amounts, but it is an authentic recipe from Italy.
Boil 3 or so quarts of water. You can add bullion if you like. I love Rapunzel organic vegetable vegan, but it's heavy on the celery.
I chop onions and leeks, celery, carrot, 2 peppers, parsnips, turnips or white beets, some fennel, green beans. Drain a small can of kidney beans and 1 chick peas. Sweat these down in a little olive oil until soft, adding a ladle of water as it dries out. I add some salt to draw out the moisture. I then chop an entire head of parsley and kale leaves only. I add them to the pot and slowly add a ladle of broth as needed. It shouldn't look soupy yet, more like vegetable stew.
I separately cube potatoes, chop zucchini and add them. I add some more broth only if needed, then 1 big can of crushed tomatoes. I then add more liquid and cook it down until the potatoes are firm but tender. Lately I add chopped butternut squash too and cook it until that's tender.

I have such a good one for the crockpot
It's a bit different than a traditional minestrone- but soooo good.
