Need dinner help asap
So I just found out I have to feed my sister and BIL tonight unexpectedly. I don't have time to go to the store since amazingly both kids are actually napping right now. I haven't really shopped in almost two weeks so the ingredients are limited. Oh, and BIL is a fine dining chef for a living so that always adds a little pressure! Is it even possible to feed 4 adults with these options? What would you make?
I have 3 chicken breasts and that's it for protein so I feel like I need something where the chicken is chopped up so there's enough to go around.
For produce I have yukon gold potatoes, one avocado, one lemon, one lime, carrots, tomatoes.
I have very basic pantry options like pasta, rice, beans, tomatoes, broth. I have a few kinds of cheese and not much else.

any chance you have celery and onions, frozen peas? biscuits or the means to make biscuits? You can do a chicken stew with biscuits.
I use Ina Garten's recipe tweaked here and there and it's always a hit when its cold out!

Do you have half and half, eggs and parmesan cheese? You can make chicken alfredo over pasta too.

You can make a chicken soup even if you don't have stock, sautee garlic and onions in olive oil. Then add broth or water, once it comes to a boil add all of your chicken breasts, carrots, diced potatoes. cook for like 2 hrs and then take the chicken out and shred it up, put it back into the pot and then make your pasta or rice on the side.
Depending on your seasonings you can make a chili with your chicken, sauce, rice and beans and put chunks of avocado on top.

I should have mentioned DH is gluten free. Most things I can modify but the chicken and biscuits would be too difficult. Too bad, bc I've made it before and it would have been perfect! As for the alfredo, DH and I had that two nights this week already lol.
Maybe chili would work. I usually use whole roasted chicken. Do you think skinless, boneless breasts will have enough flavor?

Do you have cheese, ham, spinach, breadcrumbs, etc? Anything you can use to make baked chicken rollout, like the skinnytaste ones? She does ones for chicken cordon bleu, ones stuffed with spinach and mozzarella, etc. you can search her recipes.
You could slice each breast in half horizontally to make six cutlets, pound thin, layer on cheese, him, etc and roll up chicken. Dip in egg wash (or lemon juice or whatever), lightly coat with breadcrumbs, spray with olive oil spray and bake.
Then make a big batch of roasted potatoes and carrots as a side such, using whatever herbs and seasonings you have, or even just salt, pepper, and olive oil.
Eta - just saw your dh is gluten free, but maybe you can skip the breadcrumbs!

My first instinct is to chop up the carrots, tomatoes and chicken and do a stir fry. You can serve it over pasta with olive oil and garlic or with mashed potatoes.

I would make a guacamole and some sliced cheese for a quick appetizer. then i would serve the chicken chopped up with some root veggies and make mashed potatoes to serve it over and some sort of gravy/sauce to go with it.
thats hard but I'm sure whatever you whip up will be fine. good luck!

Thanks for all the suggestions! I think take out is going to have to work. I haven't been able to put the baby down all afternoon so it doesn't look like cooking is going to happen. I'll probably be trying one of these tomorrow though!
