eggplant recipes
My co-worker just gave me 4 eggplants from her garden. I LOVE eggplant but never cook it.
What are your best eggplant recipes?

eggplant recipes
I made a really good eggplant parm, it was a riff off of this recipe in which you roast the eggplant slices instead of breading/frying.

I didn't make it in a skillet though. I also added a bunch of roasted peppers (not from a jar, I roasted the pepper slices at the same time as the eggplant).

eggplant recipes
I make caponata, MIL's old recipe. Jar it, and it keeps a few weeks. Serve with crusty bread, and a nice glass of wine. Mmmm
