Help: Egg free facility -- Need to bake something!
I am a class mom I need to make baked goods for my son's class and they are a nut, strawberry, and egg free facility.
Before I even realized this (I knew about the nut but the egg is recent) I bought the boxed stuff like the brownies, cupcakes, and break & bake cookies...
The brownies and cupcake mix each requires two eggs and oil. So I can't do those, right??
What the heck can I do?? I can't find anything that doesn't require an egg.
I called a bakery to see if I could buy something and got laughed off the phone.
Whatever I make is going to taste like sheetrock, isn't it???
Help!!!

Mix the cupcake mix with a can of pumpkin purée. I get spice cupcake mix and mix the pumpkin in and they come out awesome.

Anyway, do you have to bake something or can you buy it? One of my friends sons has that allergy I can ask her for a recipe or a bakery she uses

I know, isn't that hysterical?
I could do either.
Pete goes, can't you just buy a few allergy friendly items for the one kid who has the allergy and let all the other kids eat the stuff you bought to make?? He feels bad bc I already bought the box stuff. But is that an option or no bc of the "in the air" issue? It's not nuts though, it's egg.

Ok, a response from one friend. Waiting on another friend who's son has an egg allergy
We did a lot of baking and cooking with Egg Replacer and apple sauce. you use one container of apple sauce in replacement of egg each the recipe calls for. I personally prefer ground flax seed meal mixed with water. Gave a better consistency.

My daughter goes to school with a few allergy issues in the class and the teachers are very on top of what the kids can and cannot eat.

I know, this is a good point. I was afraid to do that bc I don't want to seem insensitive to the issue but it's so challenging -- but just to see, I'll call and ask.
The director can be difficult too so that's why LOL.

You can use ground flax seed and water in place of each egg. It will make the same consistency and still taste good!

I don't cook really but I use Allie's bakery in Hicksville...they are nut/egg/dairy/and gluten free...kinda covers all bases. If she needs several I would call them ahead of time to make sure they have or else they may have only 4-5 in stock.

There are plenty of bakeries that can accomodate your needs. I wouldn't bake anything because you don't want to be responsible if a child has a reaction. Also, I would get the same snack for everyone, not just the allery kids, so you don't single anyone out.

Insensitive because you are asking questions about something you don't know about? I think it's more insensitive to NOT ask questions and try and guess....
Also, check with your school about homemade stuff. Our district doesn't allow any homemade snacks that are for kids other than your own. It has to be store-bought so it has an ingredient list and any warnings about being made in a facility that handles peanuts. Just because you didn't add peanut butter to your cookies doesn't mean your home is peanut free, or a utensil wasn't used to touch peanuts just before.

These are awesome and don't taste like pumpkin at all.
Very rich and moist
1 Box devil's food cake mix 1 can of pumpkin puree 1/2 cup of water
combine and spoon into muffin tins (batter will be VERY thick)
Bake at 350 for 30 min
Top with cool whip
Delicious!

You can also use applesauce in all cake mixes to replace eggs.
ETA: I would read the box though because I don't think brownie or cake mixes are nut free. I would just go with something from the allergy free bakery. God forbid..

I would personally never do a separate and different item for the allergy kids when you don't need to. Maybe I'm sensitive because I'm the mom of the kid that would be "different", but I just think it might be sad for them to be singled out, especially when you can easily avoid it. Just my opinion, not judging or criticizing what anyone has suggested.
