I would ask to contact the parent. I just did this for an iceceam event ast school and the parent sent me a picture of exactly what their child can have, which I bought.
I personally would not feel comfortable cooking something for a class that had severe allergies without conferring with the parents first.

Insensitive because you are asking questions about something you don't know about? I think it's more insensitive to NOT ask questions and try and guess....

You are so right about this! I feel like nowadays people ARE afraid to ask about things they don't know a lot about! And we really shouldn't be. I'm glad I asked.
She said she will talk with the parents of the one child with an egg allergy about me getting them a cupcake that's egg free. So we shall see! Hopefully it'll work out!!

I made this http://www.chowhound.com/recipes/basic-vegan-chocolate-cupcake-10794 using coconut milk and dark cocoa. It was a legit delish recipe, even without eggs!

I think it was awesome that you're putting so much thought into it. I love to bake but I'd be worried about baking something for the class when I knew there was a child with a severe allergy. If you were able to purchase the same treat for the entire class that would probably be best. My son has a peanut allergy and doesn't mind having a different treat for a party (one that I sent at the beginning of the year) but the child in this case might get upset if s/he have something different from the group, even if it's for their own safety. Try to put yourself in the shoes of the child/parent. Good luck! I'm sure the kids will enjoy whatever you decide to send in.

Whole Foods sells mixes by Cherrybrook Farms nut free, dairy free and egg free
The yellow cake mix and brownies are really good. Shop rite carries it as well.

I wouldn't let my kid eat something that someone else baked anyway - so you might want to check on that as well.
I provide all of his treats for any parties, celebrations, etc.

These are awesome and don't taste like pumpkin at all.
Very rich and moist
1 Box devil's food cake mix 1 can of pumpkin puree 1/2 cup of water
combine and spoon into muffin tins (batter will be VERY thick)
Bake at 350 for 30 min
Top with cool whip
Delicious!
Is this a sixteen ounce can of pumpkin??

A lot of those brownie mixes and such, although they do not contain nuts are processed in facilities that may contain nuts.... So even by substituting the egg - it may not fall into the nut free category.
I'm doing banana ghosts - for my older son's kindergarten class, you can only bring in fruit, veggies and cupcakes and I figured since I got allergy safe chocolate chips for eyes - I would do it for my younger son too who has a boy with a peanut allergy in his class.

I would personally never do a separate and different item for the allergy kids when you don't need to. Maybe I'm sensitive because I'm the mom of the kid that would be "different", but I just think it might be sad for them to be singled out, especially when you can easily avoid it. Just my opinion, not judging or criticizing what anyone has suggested.

They look awesome. I'm surprised his daycare allows anything without a label tho. Dds nursery school we can't bring in anything homemade. It has to have a label that they can read ingredients. I'm sure it's a huge liability with allergies.

On the flip side, we have a boy in our Boy Scout troop with a bad peanut allergy, and he is sad when everyone else has to sacrifice just to have something he can have. He would rather have something just for him so that everyone else can have something that they enjoy. This is why it is so important to ask questions and not just guess and assume.
Then, while everyone is focusing on nuts, nobody is thinking of all of that sugar they are bringing in, and how us diabetics feel....
(Just kidding.... most of us are OK with other people having sugary stuff and us just having carrot sticks.... )
