need party food ideas please- on a budget
so we are having a birthday party at my house next week to celebrate mine & Hubby's 40th birthdays. I want to do a bunch of appetizers, but need ideas for the actual food. I feel like every party we do Italian food..not that we don't love it but its just always the same, and I usually end up doing all the cooking but this time I want to just do the apps myself- not the actual meal. Was thinking of catering chipotle, but that might end up being pretty pricey... Any thoughts/ideas?

I like doing Greek. Pita with assorted dips and spanakopita for apps, a big greek salad, trays of chicken, beef or lamb, salmon kebabs, rice, veggies. Its good for picky eaters because its simple.
If you really wanted mexican its's so easy and cheap to do it yourself. Ground beef and seasoned chicken, taco shells/tortillas, fajita veggies and all the fixings. Could do seasoned shrimp for shrimp tacos, too. Coronas, sangria and margs. Also, there's an e-coli outbreak in chipotle.

Just realized you said Mexican food How about making a taco/fajita station I know you don't want to cook but it's fairly easy to ground some beef and or chicken and set up bowls with the fixings For apps you can get so many Mexican types and have a bowl with chips, guacolome, stuff like that

I agree a mexican type thing is always awesome and fairly inexpensive. You can do:
-A crockpot of regular chili or white chicken chili
-Ground beef taco meat
-grilled shrimp or chicken
-Sauteed peppers ad onions for fajitas
-a pot of yellow rice
-a pot of black beans
-refried beans
-flour tortillas & hard shells
-fixins (sour cream, shredded cheese, lettuce, tomato, red onion, black olives)
and no party is complete without chips and lots of guacamole & pitchers of margaritas!

Fairway does an awesome fajita package that comes with everything, even rice and chips, and it's super-cheap. I think it's $40 for beef or chicken to feed 10 people, but it really can feed way more than that.

I once catered Mexican food for from a local, non-chain place. It was a huge hit and was under $200 fir everything. It was a couple years ago, but I think we did empanadas, mini burritos, a tray of steak, a tray of chicken, wraps for tacos, tray of rice, pot of black beans. Everyone loved it
