Re: Need very easy recipe for cookie exchange

My favorite cookies are chocolate crinkle cookies! So easy and delicious!

Chocolate Crinkle Cookies

Ingredients:

-1 Cup Unsweetend Cocoa Powder
-1 1/2 Cups White Sugar
-1/2 Cup Vegetable Oil
-4 Eggs
-2 Teaspoons Vanilla Extract
-2 Cups All Purpose Flour
-2 Teaspoons Baking Powder
-1/2 Teaspoon Salt
-Confectioner’s Sugar (For Dusting)

1. In a mixing bowl, sift together flour, baking powder, and salt. Set aside.

2. In the bowl of an electric mixer, beat together cocoa powder, white sugar, and vegetable oil until it comes together into a shiny, gritty, black dough.

3. Add the eggs, one at a time, mixing for 30 seconds after each addition. Add the vanilla and mix in thoroughly.

4. Slowly mix flour mixture into the chocolate mixture at low speed until just combined. Do not overbeat. Wrap dough in plastic wrap and chill overnight or for at least four hours.

5. Pre-heat the oven to 350 degrees and line two baking sheets with parchment paper. Place the confectioner’s sugar in a wide bowl or dish. Using a small scoop or rounded teaspoon, scoop out chilled dough and roll into 1 inch balls with your hands. Roll the balls in the confectioner’s sugar and place on cookie sheets. Bake for 10- 12 minutes. Allow to cool for a minute before transferring to wire cooling rack to cool completely.

I love, love, love these soft ginger cookies. I use butter instead of margarine but other than that file the recipe and they're very easy.

I've made cookies similar to these using cake mix...they are delicious and so easy...no one ever believes they are from a mix!
