Gingerbread recipe?

Any one have a good one? And what do you frost them with. My kids want to make this this year and believe it or not....I've never made them. Thanks...

I have a really good recipe. I actually got it from an Etsy seller that I purchased a mini gingerbread house cookie cutter set from! And then you ice them with royal icing which is easy to make. It's pretty much impossible to mess up!

Gingerbread Cookies

Ingredients:

-1 Cup Shortening
-1 Cup White Sugar
-1 Cup Unsulphered Molasses
-1 Teaspoon Salt
-1 Teaspoon Baking Powder
-1 Teaspoon Cinnamon
-1 Teaspoon Ground Ginger
-5 Cups Flour
-4 Tablespoons Water

Combine shortening, sugar, molasses, salt, baking powder, cinnamon, and ginger in a mixing bowl. Mix until well blended. Reduce speed to low. Add flour one cup at a time, alternating with the water. Continue mixing until dough forms. Dough will be slightly sticky. Wrap in plastic wrap and let chill for 30 minutes. Pre-heat oven to 350 degrees. Line baking sheet with parchment paper. Roll out dough on well-floured surface ¼ inch thick. Bake for approximately 12-14 minutes or until no indentation remains when touched. Transfer to cooling rack to cool completely. Store in airtight container.

Royal Icing

Ingredients:

-3 Tablespoons Meringue Powder
-4 Cups Powdered Sugar, sifted
-6 Tablespoons Warm Water

Beat all ingredients until icing forms stiff peaks, about 7-10 minutes with stand mixer, 10-12 minutes with hand mixer. Transfer to piping bag to decorate cookies.

*Note: If your icing is too thick, add water a little at a time to thin. If your icing is too thin, add powdered sugar a little at a time to thicken.

I make them with the Betty Crocker pouch mix, and they are SO good! Better than homemade IMO. I bake them on 350 for about 13 minutes and they come out soft and yummy! I make them every year now!
