"Meatless Mondays"
I'm trying to wean my husband off of needing meat every night...anyone have any delicious and hearty meatless recipes? We like really diverse food, so different spices/flavors are a plus!

we like:
-penne alla vodka (my absolute favorite) -bell pepper & mushroom fajitas (we spice it up, lime juice, cumin, etc.) -vegetable pot pies, like chicken pot pies but without the chicken... (especially good if you use fresh sage, rosemary and thyme) -eggplant parm with or without pasta -grilled vegetable kabobs with sides like hummus, babaganoush, tzatziki -so many different salads -so many different soups -grilled cheese (paired with soup usually) -ravioli and garlic bread

We've been doing vegan once a week for the past month and it's been much more doable than I thought. I also cook gluten free for Dh so that limits me a bit further but here's what we've tried so far.
black beans and rice I've made this for years. I usually add sour cream and cheese but to keep it vegan I just did fresh guac and it was delicious. You can add corn and chopped tomatoes, etc too and serve with tostitoes.
lentil soup Trying this later this week. I'll serve it with baked pototoes and maybe a salad to make it more filling. Maybe gf baguette.
Crockpot sweet potato lentils This was really good, we had it with homemade naan.
Noodles with peanut sauce I made this with thin rice noodles so it wasn't that filling. Maybe with spaghetti as written it would be more filling. We also had steamed edamame with it for extra protein.
Sweet potato chickpea buddha bowl This is on my list to try some day.

I just made ST sweet potato casserole. It says to use chicken but since there are black beans too I would double the beans. SO good and you can make ahead and bake or just reheat!

Tofu teriyaki stir fry Chickpea soup Eggplant parm Pasta with garlic and oil Butternut squash risotto Portobello mushroom "steak" salad Homemade pizza Cesar salad with chickpeas and black olives Veggie burgers w/ sweet potatoes wedges Spinach pie and Greek salad

I can't find the recipe online, but we enjoy a mushroom and rice soup/risotto.
1 Small onion, diced 1-2 Tbsp butter 1 Pound sliced mushrooms (I'll use the portabella first, if not available white mushrooms, or you can do a mix.) Pinch of Salt Cook over high heat for about 10 minutes, until the onion and mushrooms are soft. Use 2 tbsp flour to thicken.
Add 4 cups stock (I use chicken) and add 2 packets of wild rice (At Stop and Shop they have small packets of wild rice, that contain some spices, I use 2 of these.)
Simmer for 45 minutes. If you like at the end you can add a small bit (quarter cup, maybe) of cream just to make it a bit creamier.
We like it more like risotto instead of soup, so I'll boil it more at the last 5 minutes to thicken it up if needed.
Then we'll serve with a nice crusty bread. It is very filling and the mushrooms have a meaty taste to it.
