Gluten-free, vegetarianish brunch

Help! I invited my neighbors (mom/dad, 3 kids) over for brunch this saturday and mom eats gluten-free. Only the dad eats meat. And mom also has some dairy sensitivity.

Help!I have no idea what to make for brunch! I don't really know what to do. Does anyone have any suggestions/recipes for GF, no meat, brunch items?

What about a baked oatmeal casserole? Just be sure to buy gf oats and sub out any milk for almond milk.
You could do simple scrambled eggs with bacon on the side for the meat eaters, fresh fruit, and some gf muffins using gf flour or even look for a mix. There are so many options in the stores.

Does the dairy sensitivity include eggs?

You can make:
Fruit Salad
Fruit Smoothies
Potato Pancakes
Potato Hash
Buy GF muffins and cookies
Polenta (you grill it and make egg in a hole)
Quinoa Salad
Grilled Veggies or Roasted Veggies

You could do egg omelet muffins (just scramble up some eggs, add in some veggies, pour into muffins tins, and bake for about 10 min), hash browns, fruit salad, GF pancakes (there are lots of mixes, but I believe even Bisquick now makes a GF mix). UDI's makes GF muffins - you can find them in the GF freezer section and they're actually pretty good.

Just make sure that anything that you physically make - do it completely separately from the regular food. So, if you make pancakes, you need to do it on a clean skillet. Don't use the same skillet you use for the other pancakes. Most people who are Gluten Intolerant can get sick from cross contamination.

Thank you for all of the ideas!!! DS1 got sick then me then DS2 so the brunch was cancelled and is finally happening this weekend!
