menu thoughts?
we are having a bbq saturday. probably around 20ish people, including a couple little kids. some vegetarians, one gluten free. thoughts on this menu? i also have a box of veggie burgers in the freezer in case anyone wants. should i get another?
veggies and dip chips salsa guac
garlic keilbasa ring with honey mustard burgers hot dogs chicken legs veggie kabobs maybe marinated skirt steak or something
lentil salad mediterranean pasta salad (mayo free - it's a bunch of roasted veg tossed with pasta in a balsamic vinaigrette) health salad
fruit rice krispie treats brownies pineapple upside down cake key lime pie bars with a gingersnap crust cookies

I'm a pescetarian so for me I would def want the veggie burgers. Would also love shrimp on the bbq too.
Looks like a great menu tho

What is "health" salad?

Here’s the recipe – you can adjust it to whatever looks good in terms of amounts of celery, pepper, cucs, and carrots.
1.5 lbs white cabbage, thinly sliced (or you can just get the equivalent in pre-shredded cabbage) ¼ c + thinly sliced celery ½ green pepper, thinly sliced 2 persian cucumbers, thinly sliced 2 carrots, thinly sliced Chives to taste
¾ c white vinegar 2 tablespoons evoo ½ c sugar 1 tablespoon salt ½ tsp white pepper
Mix all the dressing ingredients together and adjust sugar, salt, pepper to taste. Mix with veg. Let marinate 1-2 days before serving, tossing it around periodically.
ETA: You could definitely use cole slaw mix with cabbage and carrots for this, but I wouldn't use a mix that has red cabbage in it - I think the color would end up bleeding into everything.

Salad Ingredients:
1 pound dried red lentils 1+ cup currants 1/3+ cup capers 1-1/2 cups finely chopped onions
Instructions:
Wash lentils and cook in boiling water, testing after only 2 minutes; cook about 5 minutes, or until tender. Rinse and drain. Mix with veg. Combine dressing ingredients and pour over lentils. Best done at least one day ahead.
Vinaigrette Dressing
Ingredients: 3/4 cup corn oil (or other neutral oil) 1/2 cup red-wine vinegar 2 tablespoons sugar 2 teaspoons salt 2 teaspoons pepper 1 teaspoon ground cumin 1 teaspoon dry mustard 1/2 teaspoon turmeric 1/2 teaspoon mace 1/2 teaspoon ground coriander 1/2 teaspoon ground cardamom 1/4 teaspoon cayenne 1/4 teaspoon ground cloves 1/4 teaspoon nutmeg 1/4 teaspoon cinnamon
My changes are - I don’t use mace, because I don’t have it, so I just use a little extra nutmeg. I also usually add a 1/2 tsp sweet paprika (but last night I accidentally used smoked and it’s still good!). I also will often add in a little honey to taste. The idea is that you want it to be sweet and sour. I always use extra capers and currants, and use a mix of evoo and canola or grape seed oil. You can also throw in some extra veg if you want (carrots, peppers, broccoli in tiny pieces) – whatever you have sitting around. Last night I added garlic scapes and radishes. Make sure to undercook the lentils and put the dressing on while the lentils are warm so it absorbs. The salad is also really good with some feta mixed in. Enjoy!
