A year ago I signed up for Happy Herbivore's weekly meal recipes (plant based). And a year later I haven't made anything. I'm great about printing them out, but I don't typically like cooking so I get intimidated by the recipes (some are complicated but most are basic).

I'm hoping that if I batch cook that I'll be more likely to stick with it since all the cooking would be done once instead of every night. Does anyone have tips for batch cooking? She suggests batch cooking stuff like rice and pasta, but I find they don't taste as good reheated.
