Meal Prep!
I started meal prepping this week (did it on Sunday) for lunches only. What do you bring to work for lunch that is pretty healthy? I did a combo of 1/2 cup sweet potato with either shrimp or salmon or ground turkey and broccoli or brussel sprouts. Such an office faux pas heating up my lunch with the seafood and broccoli. LOL
Also, snack ideas? I just packed fruit and yogurts.

For lunch- when I remember or am not too lazy to bring anything- I usually bring a sandwich on a pita or a wrap. Turkey, Chicken, Ham or whatever. I like putting roasted red peppers on it and I buy a bag of salad greens and put that on it for bulk
I also will bring a salad with grilled chicken or tuna on it.
I generally don't bring hot lunches to work
Snacks- yogurt, cheese, almonds (Blue Diamond has these Salt and Vinegar flavored almonds that are TO DIE FOR!)

Meal Prep!
I make mason jar salads and they really do stay fresh. I grill chicken and then layer dressing, veggies, chicken, Craisins, pecans, feta,and spinach. We have them 3 or 4 days a week.

quinoa and grilled shrimp is sooooo good and you can eat it cold.
I have a microwave but i never use it. even grilled chicken over a bed of arugula and tomatoes with some vinegar is so healthy and filling.

A soft boiled egg and overnight oats with fruit for breakfast. Yogurt for mid-morning snack, a piece of fruit for another snack. Lunch is a salad with some type of protein - chicken, fish, cheese, hummus. Sometimes I bring a small sandwich and buy a little salad or soup to go along with it.

I usually meal prep dinners, with intentional leftovers (we are a family of 3, so it isn't hard, lol), to utilize in lunches during the week.
So I'll buy salad greens and then if I make chicken or london broil or taco meat or something like that, I can have it over a salad for lunch. Or make a sandwich out of it.
In the warmer months, I also like to make something like a big batch of pasta salad or quinoa bowls or something along those lines to take for lunches. They hold up better than green salads so you can make them in advance. I like making no-mayo egg or tuna salad (using avocado or cottage cheese) and having it for lunch with veggies or homemade crackers.
In the winter months, I love to make big batches of soup or stew or chili to take for lunches.

I started to do this last week, couldn't do it Sunday because I was working but this is some lunch meals I did: *Grilled Chicken Caesar Salad *Ground Turkey Taco Salad *Grilled Chicken with Broccoli Mash (Left overs) *Skinny Marinara Chicken with Cauliflower Cakes (switched my dinner and lunch (salad) *Fat Free Cheddar Cheese stuffed Sirloin burger (no bun) w. Sweet Potato & kale hash
This week: *Salad with french dressing *Turkey Burger stuffed with cheese,lettuce & tomato & Bean Salad *Left over Zucchini Lasagna *Grilled Caesar Chicken, Broccoli Mash
