Favorite Recipe using carrots?
Need to use up a whole bunch of carrots before they go bad. Please share your favorite carrot recipe

Favorite Recipe using carrots?
I would just roast them with oil, S & P and use them as needed through the week with breakfast, lunch and dinner.

Favorite Recipe using carrots?
I do roasted root veggies the same way except I add red onions, rosemary and thyme, too. Enjoy!
