I need some too now that the weather is cooler. I usually do soups, chili or beef stew only.
I saw the campbells pouches for pulled pork and pot roast the ingredients looked fairly healthy. Has anyone tried that

I'm still on the fence about my slow cooker. I won't leave the house for an extended period with it on.
I like to brown my meat and veggies, feel that it gives the dish more flavor. If I'm going to do that, I might as well just finish cooking on the stovetop or in the oven.
I've done pulled pork - really easy, just pork shoulder, a bottle or 2 of bbq sauce and cook on low about 8 hours.

Believe it or not. One of my favorites is chicken cutlet parm. If you're ok with jar sauce. I've made it a few times and it's so good!

Trying this one tonight so I can't say yet how it turns out but I always like the recipes on this blog. chicken and corn chowder
A few other favorites: brown sugar balsamic pork loin
Chicken tikka masala
Also, pulled pork. I just do a pork butt and a sliced onion with root beer. Cook a loooong time, 10 hours or so for a big one. Drain the liquid and stir the meat back in with your favorite bbq sauce.
I used to do meatballs with spaghetti squash. Add a jar of sauce, frozen meatballs, and a jar of sauce. After 3-4 hours on high you can shred the squash and top with the meatballs and sauce. I stopped making it bc target stopped carrying the meatballs we liked.
I do pot roast but usually just look at a few recipes and then do a mish mosh. Brown the meat if you have time. Add that with an onion and carrots, garlic, beef stock, whatever spices you like.

this one my kids love, I serve on top of tortilla chips salsa chicken

Butternut Squash Soup:
This is cooking as we speak in the crock pot. I do have some modifications. I hate Vegetable broth; so I used Beef Broth. Instead of Coconut Milk I will use 1/2 and 1/2 with a smidgeon tiny drop of Coconut Oil for flavor. I also omitted the sage. I will be serving this with Olive Bread (bought at North Shore Farms).
But here is the recipe:
Slow Cooker Butternut Squash Soup
This slow cooker butternut soup is rich, creamy, and full of delicious butternut flavor. It's also naturally vegan and gluten-free.
Prep Time: 15 mins
Cook Time: 4 hours
Total Time: 4 hours 15 mins Ingredients:
2 cups vegetable stock 2 cloves garlic, peeled and minced 1 carrot, peeled and diced 1 Granny Smith apple, cored and diced 1 medium (uncooked) butternut squash, peeled, seeded and diced 1 sprig fresh sage 1 white onion, diced 1/2 teaspoon salt, or more to taste 1/4 teaspoon freshly-ground black pepper, or more to taste 1/8 teaspoon cayenne, or more to taste pinch of ground cinnamon and nutmeg 1/2 cup canned coconut milk optional garnishes: extra coconut milk and a sprinkle of cayenne pepper (or smoked paprika)
Directions:
Add vegetable stock, garlic, carrot, apple, butternut squash, sage, onion, salt, pepper, cayenne, cinnamon and nutmeg to a slow cooker. Toss to combine.
Cook for 6-8 hours on low, or 3-4 hours on high, or until the squash is completely tender and mashes easily with a fork. Remove and discard the sage. Stir in the coconut milk.
Use an immersion blender to puree the soup until smooth. (Or you can transfer the soup in two batches into a traditional blender, and puree until smooth, being very careful when working with the hot liquid.) Taste, and season with additional salt, pepper and cayenne if needed.
Serve warm, with optional garnishes if desired.

Chicken stew with dumplings (you could do without the dumplings). Easy to make....2 cups of chicken broth, 2 cans of cream of chicken soup, carrots, peas, celery, a few chicken breasts. Salt and pepper then cook on low for like 6 hours. If I'm adding the dumplings I just use biscuit dough and drop it in about an hour before it's all done cooking. My kids LOVE this!
I also make pot roast in it, or pork tenderloin with carrots and potatoes. Super easy!!

I made this last night, it was good I will probably make it again.
I added chopped 1/2 onion chopped and a little bit of salt.
Slow Cooker Honey Pork Chops and Apples Recipe type: Crockpot Prep time: 10 mins Cook time: 8 hours Total time: 8 hours 10 mins Serves: 6 Ingredients 3-4 lb of pork chops (boneless or bone in) 2 large granny smith apples. sliced ½ cup honey 2 tbsp cinnamon
Instructions Place apple slices in bottom of the slow cooker. Drizzle ½ of the honey over apple slices. Place pork chops on top of apple slices. Sprinkle cinnamon over everything. Place remaining apple slices on top and drizzle the remaining honey over everything. Place lid on and cook on low for 6-8 hours, depending on how much pork is in it. Remove from slow cooker and serve with apples on top. Image Attachment(s):
