Recipes with cucumbers
I just got 2 HUGE cucumbers from my cousins garden.....What can I make with them? Besides salad...
Any suggestions????

I love cucumber yogurt sauce!!
peel and dice the cucumbers
one small container of plain yogurt
diced mint (to taste)
the juice of one lemon (again to taste)
salt and pepper
1 teaspoon cumin
mix and use as a dip or to top sandwiches.

yum, I LOVE cucumber yogurt sauce. I also make yummy cucumber salad. I cut them up (peel them so I still see a little green) and add sliced red onion. In a cup I add equal amounts of water and white vinegar, a few spoons of sugar, salt & pepper. COver the cucumbers w it and let sit for a while. It's so light and refreshing (kind of like pickles).

Cucumber Sandwiches
-Slice cucumbers into thin slices
-Get a small loaf of pumpernickel bread (or cut the large pieces of bread in quarter sized pieces)
-Swipe a small amount of butter or vegetable spread on each piece of bread
-Add the cucumber slice on top of the buttered bread
-Top with a small sprig of fresh dill

Also I love to just slice up cucumbers into sticks and sprinkle with a small amount of salt and eat. They are SOO good.
You can also make cucumber, red onion and tomatoe salad.

I made a salad similar to this last night. It was very good.

I make cucumber and tomatoe with Mozzeralla salad:
Cut up cucumbers, tomatoes and cube mozzeralla. Add salt, pepper, oregano and EVOO. Mix well it's delish !

'there was an orzo salad that I got from here not to long ago that had cucumber, orzo, tomatoes and shrimp in a yummy dijon vinegrette. It is so good----let me know if you want the recipe!!!

mmm...I love cucumbers too
I just chop up tomatoes and cucumbers and mix with any dressing (we love it with blue cheese, ranch, italian, you name it....or a vingarette with feta or blue cheese...but be4 I was preggo...now my mouth waters at the thought!)
