YES YES YES. This looks delicious.

I think every time except for maybe once; every stew meat Ive bought is as tough as Nails.

So you suggest buying the meat as a whole and just cutting it yourself into cubes?? Because I am not sure there is such a thing as a good quality stew meat. Is there?? And if so, where?

Also, thanks for the Dutch oven tip. I want one so bad for dishes like this but didn't want to spend the $$ really at the places you suggested on the site.

Do you have any suggestions on an Cast Iron pan??

Thank you!! Chat Icon It was SO good. I've been making stew for years but this was the best ever.

I have cut up my own stew meat but I will tell you, I think BJ's has the most incredible stew meat all cut up and ready to go. It's flavorful and it ALWAYS cooks up tender and delicious. I always keep some vacuum sealed in my extra freezer.

The key with stew meat is to cook it low and slow. Because it's a fattier cut of meat with lots of muscle fiber it needs a lot of time to cook so those fibers break down and melt away leaving the meat tender and soft. Some cuts you get at the store do just suck but generally, as long as you're cooking the meat long enough it should become fork tender in time. If you find it's still tough even after the recommended cooking time, just let it go a little longer.

As for the cast iron pan, if you really want to build up a collection but don't want to spend a fortune, I suggest looking into Lodge. I've found the best prices on Amazon. My favorite "go-to" pan is their 12" skillet, it works great for everything. Also, keep any eye out in places like Marshall's, Home Goods and Tuesday Morning as I have found some GREAT deals on cast iron there. I've picked up both Le Creuset and Staub pieces for a steal at all three of them.
