Re: What's easy to make..
My favorite easy and delicious meal that I like to make for big groups is pasta w/ broccoli and garlic.
Cook brocolli crowns & pasta separately (I like to use springs, penne or rigatoni) Then combine in large pot
Slice garlic super thin, and cook in EVOO you can add a dash or red pepper flakes & s&p if you like
pour over pasta/broccoli and add grated cheese or leave it on the side for people to add their own( I put loads )
simple, delish and even pleases vegetarians

Re: What's easy to make..
I always make this sweet and tangy chicken recipe with a big bowl of rice. This recipe is for enough for a 1/2 tray of food....I usually just make 2 of them for a party.
3-4 lbs of thick chicken cutlets cut into serving size pieces
2 cans of whole berry cranberry sauce 2 bottles of french dressing 2 envelopes of onion soup mix
Mix all the ingredients together in the tray, add the chicken and cover with the mixture. Bake at 350 for about 45 minutes (til chicken is cooked through)
I know the ingredients sound crazy but this is really good--I just made it for a party and it is a huge hit!! Don't tell peopl the ingredients til after they eat it--and they are usually suprised how much they like it. I always make it the day before a big party and make the rice the day of.

Re: What's easy to make..
You could also make some sort of beef or chicken teryiaki with lots of different veggies (or leave out the meat for vegitarians) and then also have a side of rice or even brown rice.
Eggplant rollotini stuffed shells
also my sister always makes quishes and they go over so well and are super easy!
