Boiled Bacon and Cabbage

For a real authentic St. Patrick's day meal! The bacon is not sliced bacon. You should be able to get it at a butcher's shop.
Ingredients
- Boiled Bacon
- Cabbage
- potatoes
- salt (optional)
- water
Instructions
2 1/2 pounds of bacon ( a large 'collar' or 'hock piece') - about 4 or 5 inches cubed
1 good-sized cabbage
1) Place the meat in a large pot, cover with cold water and bring to the boil. Add salt (optional).
2) Skim the surface sediment (the stuff that rises to the top of the water)and simmer for 30 minutes per pound of meat.
3) Quarter the cabbage and add to the pot. Cook gently for about 1/2 hour, or until cabbage is cooked to your liking - do not overcook!
4) Drain and serve mustard.
Serve With
Boiled red potatoes
