Mussels Marinara

Mussels in a spicy tomato sauce.
Ingredients
- 1 14 oz can chopped tomatoes
- 1 teaspoon oregano
- 1 teaspoon red pepper flakes
- 1/4 cup olive oil
- 2 lbs mussels (cleaned and debearded)
- 8 garlic cloves sliced
- shredded fresh basil
Instructions
Serves 2
In a large skillet, heat olive, garlic and red pepper flakes. Saute approx 3 to 5 minutes being careful not to brown the garlic. Add tomatoes and oregano and simmer for 10 to 15 minutes. Add mussels and cover. Cook approx 3 to 5 minutes until mussels open. Add basil and serve.
Serve With
Serve with crusty bread. Or for a main course, serve over linguine.
