Egg, Lemon, Chicken Soup
Ingredients
- 1 cup of rice (and enough water to cook your rice)
- 1/4 cup of lemon juice
- 2 cans of chicken stock (or vegetable stock)
- 3 eggs
- salt and pepper to taste
Instructions
Heat 2 cans of chicken stock to boiling.
In a seperate pot, make 1 cup of rice (white, brown, or whatever you want to subsitute for rice...heck even quinao will work)
While those are boiling, mix 3 eggs and 1/4 cup of lemon juice (more or less to taste). Whisk the egg and lemon together until smooth. After the chicken stock is boiled, add one cup to your egg mixture (SLOWLY) so that it heats to the temperature of the stock, but so that it doesn't scramble the eggs.
After the 1 cup of stock is added to your bowl of eggs and lemon, add the rest of the mixture to your pot of chicken stock. Heat through, or until the mixture is opaque. Add your rice
