Has anyone made gnocchi? I have a question.
I was wondering if I could make it and then boil it an hour or two later. That should be ok, right? I guess I would just put the gnocchi in the fridge until I'm ready to boil it?

Should be fine. Make sure you cover the pasta with something to avoid drying it out.

Put them on a floured plate covered with plastic wrap and then stick them in the freezer. My grandmother does this and they always taste like she just made it. If you make alot you can freeze them on the plate and once frozen transfer them into a bag and you cook the like you normally would.

Thanks! I actually made them this past weekend - ricotta gnocchi (no potatoes!). They were ok - a little too heavy IMO. But they DO dry out if you don't cover them, which started to happen to mine.
