Easy Chicken Enchilladas

Last night I made these part recipe, part winging it!

Chicken Enchiladas
1 1/2 chicken boneless breasts
cumin, red pepper, salt, pepper, garlic powered (seasoned to my taste on chicken)
1 red onion (I used white) chopped
2 cloves garlic minced
1 28oz can stewed tomatoes
1 can green chilles (small can)
1 can chipotle chilles (small can)
1 can corn
10 corn tortillas
1 can enchilada sauce
1 package shredded Mexican cheese

Cook chicken **[recipe said on stove with a little olive oil, I baked in oven]**
cook chicken on one side, flip and covered with the 5 seasons, and cook rest.
Take chicken out of oven and set aside to cool.

**[I have these great T-fal pans that can go from oven to stovetop (removable handle) so I used the pan from the chicken.]**

Take the chicken drippings and brown onion and garlic

Add corn and can of stewed tomatoes. Cook about 5 minutes, until heated. Add cans of chilles and green chilles.

Take chicken and pull apart with hands, so it's shredded. Add to tomato/corn mixture. Continue simmering until all hot and bubbly.

**[I made this earlier in the day and put together hours later. So I assume you could make this a day prior and reheat and put together when ready to eat]**

Spread a layer of enchilada sauce on bottom of shallow pan.
Take corn tortillas. You can heat them for 30 sec in microwave to become more workable.
Dip tortilla into sauce. Spoon chicken mixture into tortilla, fold and place seam down in pan.

**[I fit all 10 in my casserole pan]**

Pour remaining enchilada sauce on top and Sprinkle with cheese **[I used whole shredded bag]**

350 heat until cheese is all bubbly

ENJOY!!!

I served on the side....

Mexican Zucchini Fries
2 zucchinis

Cut zucchini in half (narrow way), and then quarters or desired thickness, length
Spray cookie sheet with cooking spray (I coved sheet with aluminum foil, still sprayed though- LESS TO CLEAN WHEN DONE) Spray zucchini with spray. cumin, oregano, red pepper, cook at 500 degrees about 15-20 minutes.

WAS SO EASY And A HIT!!!!
