Re: Flank steak
Honestly, my favorite way to eat flank steak is marinated and grilled .
I usually marinate it in olive oil, soy sauce, teriyaki sauce, chopped garlic and some Italian dressing. Let is marinate for 24 hours and then grill it. YUM!

Re: Flank steak
I use some type of marinade (teryaki usually) and cook it for 7 minutes on each side on my grill pan. Let rest 5 minutes and slice thinly and serve on torilllas with onions and peppers.

I never knew there was a real difference. I do use skirt steak to make "real" fajitas.
Here is a link describing the difference:

Re: Flank steak
here ya go:
Braised Stuffed Flank Steak w/Fettuccine
2 Tbsp plain dry bread crumbs 1 Tbsp freshly grated Parmesan cheese 2 Tbsp finely chopped fresh parsley 2 1/2 lbs. boneless flank steak (Use a meat mallet to pound the flank steak to 1/4-1/2 inch thickness) 4 slices provolone cheese 2 oz thinly sliced prosciutto 1 tsp olive oil 1 lb fettuccine, cooked and drained 26 oz (1 jar) of Your favorite sauce (we use homemade)
In small bowl, combine bread crumbs, parmesan cheese and parsley. On flank steak, evenly layer the provolone cheese, then the bread crumb/ parmesan cheese/parsley mixture, then the prosciutto, leaving about 1/2 inch border. Roll lengthwise, with the grain, and tie securely with butcher string.
In a deep, 12 inch non-stick skillet, heat olive oil over medium-high heat and brown the steak. Add pasta sauce. Simmer (on low) covered, 1 1/2 - 2 hours, or until tender. Remove steak; let stand (covered) for 5 minutes. Toss sauce with hot fettuccine. Remove string, slice steak and serve over fettuccine.
Enjoy!

I made this last night and it was soooo good. My DH loved it.
We used homemade sauce too rather than jar.

Re: Flank steak
Last night I made steak enchiladas.
Put the flank steak in a slow cooker, cover with water, add some fajitas spices (or whatever spices you want). Cook on low for 10 hours. Take meat out and shred (it's sooo tender!).
Add some enchilada sauce to the meat. Take a stack of corn tortillas, wrap in damp paper towels, and microwave for about a minute or until soft.
Roll meat in tortillas, place in a casserole dish, cover with more enchilada sauce and shredded cheese, put in preheated 350 oven for 20 min.
Serve with sour cream, guac, black olives, etc.
They come out awesome!
